Triple chocolate cookie recipe
It’s extremely rare for a bake to leave my kitchen without having any chocolate in it. What can I say? If there’s no chocolate in the recipe, there’s always room for improvement.
Orange biscotti? Chuck some chocolate chunks in there. Reasonably healthy oat cookies? Always an improvement when drizzled or dunked in melted in chocolate. I’ve never been one to shy away from it, and the more the better in my eyes. So, as you can imagine, triple chocolate cookies are my idea of heaven.
The first time I made these was for a roadtrip to Wales for my 21st birthday. They were the perfect pick me up once we’d arrived and needed to top up our energy! Cookies are a definite weakness for me, and there’s rarely a cookie I don’t like (except for a Subway cookie I had the other day – that was just bitter disappointment). I know it’s easier to grab a packet from the shops, but I honestly love baking, and these are well worth it. They’re really quick and you can make them whatever size you’d like – obviously mine are pretty huge but you can make them smaller. I doubt they’d last long, considering they’re so moreish, but keep them in a biscuit tin and they’ll last really well whilst still keeping that classic biscuit crunch.
The recipe I used is based on one from BBC Good Food - my main go-to for baking. You can find the recipe here, but I adapted it slightly and so the ingredients I used are to the right. I added in both dark and white chocolate (of course) rather than just plain and milk to make these triple choc, and also removed the peanut butter and the roasted peanuts. Feel free to edit as you wish, just keep the sugar/egg/flour quantities the same!
These cookies are incredibly good and far too easy to eat for a chocoholic like myself. They'd be perfect for a birthday party or event, if you can bring yourself to share them, that is.
Recipe slightly adapted from BBC goodfood
1 egg
100g melted milk choc
50g milk choc chunks
50g white choc chunks
50g dark choc chunks
100g light brown sugar
85g butter
100g self raising flour
1/2 tsp vanilla extract
100g chocolate chips

Preheat oven to 180 fan
Stir in the sugar, butter, egg and vanilla into the melted milk chocolate until well mixed. Then stir in the flour and most of the chocolate chunks. Mix together, then drop spoonfuls of the mix onto lined baking trays. Use the rest of the chunks to add on to the top of each cookie. Bake for 10-12 minutes. Let cool (if you can!)
