Flapjack Recipe




Hello! I've got a recipe to share today. I actually only tried flapjack for the first time a couple of weeks ago. I like to think they're great healthy snacks, but perhaps I'm only fooling myself when I look at the sugar/butter quantities! Ha!
I have to thank my boyfriend's Mum for this recipe. I was having a look on the internet for something easy but I'm quite picky with my flavours. I kept mine simple by just adding raisins but you can add any dried fruit like cherry or coconut. You can even add ginger and lemon zest to them if you want to make them fancy, al la Lorraine Pascale. Personally, I prefer simple recipes that are less fuss so here's a family recipe that is easy as well as delicious :)

Ingredients:
6oz margarine (you can use butter if you want)
3oz light brown sugar
3tbsp golden syrup
12oz porridge oats
Fruit of your choice

I'm afraid I didn't take any photos whilst I made these, but it's very simple.
Melt the margarine in a saucepan and add the sugar and syrup.
When it's all melted, take it off the heat and add in the porridge oats. I used Quaker oats but you can buy simple own brand product oats in supermarkets for as little as 75p. Makes for a really cheap snack if you're on a student budget!
I added in a load of raisins and mixed fruit, but just did this by eye. The mixture should look pretty evenly distrubuted with the fruit, i.e. don't be stingy!
Make sure you use a big enough saucepan because that's quite alot of oats! Stir everything together and try to get all the oats covered.
Grease a baking tin and then pour in the oat mixture. Spread it out and press down into the corners and create an even layer.
Bake in the oven for about 20 minutes on 180c or gas mark 4. They should be set (a little firm to the touch) and golden brown. Depending on your oven, it may take longer or even a shorter amount of time so make sure to check on them rather than think they will take exactly 20 minutes :)
Once you take them out of the oven, cut them up! They have to be cut whilst it is still hot because othewise you'll end up with one giant flapjack. I made 24 little squares from this recipe but you can cut them as large or small or whatever shape you like. Let them cool once cut still in the baking tin.
Once cooled, you can seperate them up and enjoy! I keep mine in an airtight container and then grab one out as a snack or to add to my lunchbox.
